  • 2 large chicken breasts
  • 1 tsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp dried tarragon
  • ¼ tsp salt
  • 2 flatbreads
  • ½ cup BBQ sauce
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese
  • 1 small red bell pepper, chopped
  • ¼ cup red onion, sliced
  • 2 Tbsp cilantro, chopped

Instructions

  1. Pat the chicken dry and cut into halves if large. Season with olive oil, oregano, tarragon, and salt.
  2. Heat a skillet over medium-high heat; cook the chicken for about 8–10 minutes per side until it reaches an internal temperature of 165°F. Let rest before chopping.
  3. Preheat oven to 375°F. Place flatbreads on a baking sheet and brush each with BBQ sauce and sprinkle minced garlic.
  4. Top with mozzarella cheese, cooked chicken, bell pepper, and red onion. Bake for 10–15 minutes or until the edges are golden brown.
  5. Remove from the oven and garnish with cilantro; slice using a pizza cutter.
