  • 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1 1/2-inch pieces)
  • 1 sweet onion (cut into 1 1/2-inch pieces)
  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger
  • Canola oil
  • Kosher salt and freshly ground black pepper

Instructions

  1. In a medium bowl, mix together barbecue sauce, teriyaki sauce, minced garlic, and ginger. Reserve half for basting.
  2. Combine remaining marinade with chicken in a large Ziploc bag or bowl. Marinate for at least 2 hours or overnight.
  3. Thread marinated chicken onto skewers alternating with pineapple chunks, bell pepper pieces, and onion pieces. Brush with canola oil and season to taste.
  4. Preheat the grill to medium heat and cook kabobs for about 10 minutes, turning occasionally until chicken reaches an internal temperature of 165°F. Baste with reserved marinade during the last few minutes.
