Ingredients
- 1 cup all-purpose flour
- 1 and 1/2 cups rolled oats
- 2/3 cup granulated sugar
- 2/3 cup unsalted butter (melted)
- 2 cups blueberries
- 1/4 cup granulated sugar (for filling)
- 1 tablespoon lemon juice
- 1 and 1/2 teaspoons lemon zest
- 2 teaspoons cornstarch
Instructions
- Preheat oven to 350°F (177°C). Grease an 8-inch square dish and line with parchment paper.
- In a medium bowl, combine flour, oats, and sugar. Mix in melted butter until combined.
- Set aside one-third of the mixture for the crumble topping.
- In another bowl, mix blueberries with sugar, cornstarch, lemon juice, and zest until coated.
- Press two-thirds of the crust mixture into the lined dish. Spread blueberry filling on top and sprinkle reserved crumble mixture over it.
- Bake for 38-40 minutes until golden brown. Cool completely before slicing.
