  • 1 cup all-purpose flour
  • 1 and 1/2 cups rolled oats
  • 2/3 cup granulated sugar
  • 2/3 cup unsalted butter (melted)
  • 2 cups blueberries
  • 1/4 cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 and 1/2 teaspoons lemon zest
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 350°F (177°C). Grease an 8-inch square dish and line with parchment paper.
  2. In a medium bowl, combine flour, oats, and sugar. Mix in melted butter until combined.
  3. Set aside one-third of the mixture for the crumble topping.
  4. In another bowl, mix blueberries with sugar, cornstarch, lemon juice, and zest until coated.
  5. Press two-thirds of the crust mixture into the lined dish. Spread blueberry filling on top and sprinkle reserved crumble mixture over it.
  6. Bake for 38-40 minutes until golden brown. Cool completely before slicing.
