  • 1 pound ground chicken (at least 7% fat recommended)
  • 12 medium zucchini squash (about 1½ cups shredded)
  • 2 garlic cloves, minced
  • 2 tablespoons fresh chives, chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Oil for cooking

Instructions

  1. Prepare the cilantro sauce by blending cilantro, garlic, mayonnaise, cottage cheese, and vinegar in a food processor until smooth. Refrigerate for at least 30 minutes to thicken.
  2. Grate zucchini using a cheese grater, sprinkle with salt, squeeze out excess moisture, and place in a large bowl.
  3. Combine shredded zucchini with ground chicken, minced garlic, chives, salt, and pepper in the bowl. Form into six 3-inch patties.
  4. Heat oil in a nonstick skillet over medium heat and cook each patty for about 4 minutes on each side until browned. Finish cooking in an oven preheated to 350°F if needed.
  5. Serve warm with the cilantro sauce drizzled on top or on the side.
