- 1 teaspoon vanilla extract
- 1 1/2 cups shredded zucchini
- 1 cup semisweet chocolate chips
Instructions
- Preheat your oven to 350°F and grease a 9-by-5-inch loaf pan.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
- In a separate large bowl, combine eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
- Gradually mix dry ingredients into the wet mixture without overmixing. Fold in shredded zucchini and 3/4 cup of chocolate chips.
- Pour the batter into the prepared pan and sprinkle the remaining chocolate chips on top.
- Bake for 50–60 minutes or until a toothpick comes out mostly clean.
- Let cool for about 15 minutes before removing from the pan; cool completely on a wire rack before slicing.
