Ingredients
- 1 lb dried red beans
- 1 ham bone (or ham hocks)
- 14 oz smoked andouille sausage (sliced)
- ½ lb smoked ham (cubed)
- 1 medium onion (chopped)
- 2 jalapeños (finely chopped)
- 6 cloves garlic (minced)
- Spices: cayenne pepper, thyme, Kosher salt, black pepper
- Steamed white rice (for serving)
Instructions
- Soak the dried red beans overnight in plenty of water; drain before use.
- In a large stock pot, combine soaked beans, 1 gallon of water, ham bone, and bay leaves. Bring to a simmer over medium heat.
- In a skillet, heat olive oil over medium-high heat. Add sliced sausage and cubed ham; cook until browned (8-10 minutes). Stir in chopped onion and jalapeños; cook until softened (about 5 minutes).
- Mix in diced tomato, minced garlic, mustard, red wine vinegar, thyme seeds, salt, black pepper, and cayenne. Cook until hot and softened (5-8 minutes).
- Pour the sausage mixture into the pot with beans and simmer uncovered while stirring occasionally until creamy (about 3 hours). Smash some beans against the pot's side to thicken.
- Remove bones and bay leaves before serving hot over steamed white rice.
