Description

  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • ⅓ cup roughly chopped fresh cilantro
  • ¾ cup fresh Cotija cheese
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • Seasonings: salt, black pepper, dried parsley, cumin, garlic powder, chili powder

Instructions

  1. Prepare the dressing by combining avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, salt, dried parsley, black pepper, cumin, garlic powder, and chili powder in a container. Shake well and refrigerate.
  2. Boil water in a large pot with salt. Add corn for exactly 4 minutes. Drain and cool under cold water.
  3. Cut kernels off the cobs and place them in a mixing bowl. Add bell peppers, tomatoes, cucumber, onions, cilantro, and Cotija cheese.
  4. Shake the dressing again before pouring over the salad mixture. Toss to combine.
  5. Serve immediately or chill for up to one day before enjoying.
