  • 3 eggs

  • 3 tablespoons maple syrup
  • 2 1/2 cups almond flour
  • 1 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a bowl, mash the bananas and mix in eggs, cottage cheese, maple syrup, and vanilla extract until smooth.
  3. In another bowl, combine almond flour, baking soda, and cinnamon; then add to the wet mixture and stir until just combined.
  4. Pour the batter into the prepared loaf pan and bake for about 50 minutes, covering with foil if necessary.
  5. Check doneness with a toothpick; it should come out clean.
  6. Allow to cool before slicing.
