- 1 pound short pasta
- 4 ounces cream cheese
- 1/3 cup sour cream
- 2 cups grilled or roasted corn
- 3/4 cup crumbled cotija or feta cheese
- Fresh herbs (basil, cilantro)
- Spices (smoked paprika, chili powder)
- 1 avocado
Instructions
- Boil water in a large pot, add salt, then cook the short pasta according to package instructions until al dente. Drain and let cool.
- In a large mixing bowl, whisk together room temperature cream cheese and sour cream until smooth. Add olive oil, grated garlic cloves, chopped chives, salt, and pepper; mix well.
- Fold in shredded romaine lettuce, grilled corn, torn basil, chopped cilantro, crumbled cotija or feta cheese, and diced spicy cheddar cheese.
- Stir in the cooled pasta mixture.
- Melt salted butter in a small pan; add smoked paprika and chili powder. Drizzle over the salad along with lime juice and diced avocado. Toss gently before serving chilled or at room temperature.
