Ingredients

  • Olive oil
  • Yellow onion
  • Garlic cloves
  • Low-sodium chicken broth
  • Diced green chiles
  • Ground cumin
  • Cayenne pepper
  • Dried oregano
  • Great northern beans
  • Sour cream (or Greek yogurt)
  • Cooked chicken (shredded)
  • Corn

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion until softened (3–5 minutes), then add minced garlic and cook for another 30 seconds.
  2. Stir in chicken broth, diced green chiles, spices (cumin, cayenne pepper, oregano), and lime juice. Season with salt and pepper to taste.
  3. Drain and rinse great northern beans; set aside.
  4. For a creamier texture, puree a portion of the rinsed beans with a bit of broth in a food processor until smooth.
  5. Add both whole and pureed beans along with corn into the pot. Simmer uncovered for about 15 to 30 minutes.
  6. Remove from heat and stir in sour cream and shredded cooked chicken until combined.
  7. Serve warm, garnished with cilantro, cheese, avocado slices, and tortilla chips.
