- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 12 small flour tortillas (or corn)
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 2 cups chicken broth
- 1 cup sour cream
- Diced green chilies
Instructions
- In a large mixing bowl, combine shredded chicken, cheeses, onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
- In a medium saucepan over medium heat, melt butter; whisk in flour to create a roux. Gradually add chicken broth while whisking to prevent lumps. Simmer until thickened, then stir in sour cream and green chilies.
