  • 1 pound lean ground beef (90%)
  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 450F.
  2. In a skillet over medium-high heat, brown the ground beef while breaking it apart. Stir in taco seasoning and enchilada sauce; simmer briefly before removing from heat.
  3. Microwave the corn tortillas wrapped in a damp paper towel for 30–60 seconds to soften.
  4. Brush one side of each tortilla with olive oil. On a baking sheet, place each tortilla oiled side down. Add cheese and beef mixture before folding.
  5. Bake on a single layer in the oven for about 16 minutes until crispy and golden.
  6. Cool for 3 minutes before serving with your favorite toppings.
