  • 4 boneless, skinless chicken breasts
  • 1 packet dry ranch dressing
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 10 oz can Rotel diced tomatoes with green chilies (undrained)
  • 15 oz can whole kernel corn (drained)
  • 15 oz can black beans (drained and rinsed)
  • 8 oz block plain cream cheese
  • 2 fresh limes (juiced)
  • ½ cup chicken broth

Instructions

  1. Place chicken breasts in the Crock Pot.
  2. Add black beans, corn, Rotel tomatoes, onion powder, ranch seasoning, and black pepper.
  3. Squeeze lime juice over the mixture and pour in chicken broth.
  4. Top with the block of cream cheese.
  5. Cover and cook on HIGH for 3-4 hours or LOW for 5-6 hours until chicken reaches an internal temperature of 165°F.
  6. Shred cooked chicken using two forks and stir to combine all ingredients evenly.
