  • 16 slices soft white sandwich bread
  • 1 English cucumber
  • 8 ounces cream cheese (softened)
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh dill (minced)
  • 1 tablespoon fresh chives (minced)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • Cracked black pepper (to taste)

Instructions

  1. Remove crusts from bread slices.
  2. Peel and slice cucumber into thin rounds using a mandolin or sharp knife.
  3. Salt cucumber slices; let rest on paper towels for 15–30 minutes, then pat dry.
  4. In a mixing bowl, blend cream cheese, mayonnaise, dill, chives, lemon juice, garlic powder, and salt until smooth.
  5. Spread the mixture on one side of each bread slice; layer cucumber slices on half the slices and top with remaining bread.
  6. Cut each sandwich into quarters for serving.
