  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Make the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Set aside.
  2. Boil water in a large pot; cook shrimp for 2-3 minutes until pink.
  3. Prepare an ice water bath while shrimp cook. Transfer cooked shrimp to the bath for cooling.
  4. Drain shrimp after cooling and chop into bite-sized pieces.
  5. In a mixing bowl, combine shrimp, cucumber, green onion, and dressing; stir gently until coated.
