Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- â…“ cup mayonnaise
- â…“ cup sour cream
- 1 large lime (zested and juiced)
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- ¼ teaspoon kosher salt
Instructions
- Make the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Set aside.
- Boil water in a large pot; cook shrimp for 2-3 minutes until pink.
- Prepare an ice water bath while shrimp cook. Transfer cooked shrimp to the bath for cooling.
- Drain shrimp after cooling and chop into bite-sized pieces.
- In a mixing bowl, combine shrimp, cucumber, green onion, and dressing; stir gently until coated.
