Ingredients
- 1 fresh pineapple (or canned pineapple rings)
- 2 lbs boneless chicken thighs (or breasts)
- 1/2 cup coconut aminos (or soy sauce)
- 1/4 cup pineapple juice (or water)
- 1/4 cup tomato paste
- 4–6 pitted dates (or 1/4 cup maple syrup)
- Spices: garlic powder, chili powder, smoked paprika
Instructions
- Soak dates in warm water for 10-15 minutes; drain.
