  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend (or cheddar), divided

Instructions

  1. Preheat oven to 350F.
  2. In a skillet, heat olive oil over medium-high heat; add ground beef and cook for about 5 minutes.
  3. Stir in chopped onion, chili powder, garlic powder, and cumin; cook until onions are soft.
  4. Layer crushed Doritos in a 9×13 casserole dish.
  5. Drain excess fat from the skillet; mix in black beans, corn, salsa, and half of the cheese until heated through.
  6. Spoon the beef mixture over Doritos; top with remaining cheese.
  7. Bake uncovered for 15-20 minutes until warm and melty.
