Ingredients

Scale
  • 12 ounces to 1 pound fresh morels
  • 2 cups flour
  • 1 tablespoon salt
  • 2 teaspoons ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 eggs
  • 1/2 cup milk
  • Lard (or butter or vegetable oil for frying)

Instructions

  1. Prepare the Morels: Clean and pat dry the morels after soaking them in cool water.
  2. Mix Dry Ingredients: In one bowl, combine flour, salt, black pepper, garlic powder, and onion powder. In another bowl, whisk together eggs and milk.
  3. Heat Oil: In a large sauté pan, heat enough lard (or butter/oil) to reach about 1/2 inch deep at temperatures between 325°F to 350°F.
  4. Coat the Morels: Dust each mushroom with the seasoned flour mixture, dip into the egg wash, then return to the flour mix for extra crispiness.
  5. Fry: Place coated morels in hot oil without overcrowding. Fry for about 3 to 4 minutes per side until golden brown.
  6. Drain and Serve: Transfer cooked mushrooms to paper towels to drain excess oil and serve warm with lemon wedges.
