  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. In a heatproof bowl, melt the chopped dark chocolate and butter over simmering water and stir in vanilla extract once melted.
  3. In a separate bowl, whisk together the caster sugar, Demerara sugar, and eggs until light and fluffy.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl; add chocolate chips.
  5. Fold the melted chocolate mixture into the egg mixture gently to maintain airiness.
  6. Gradually fold in the dry ingredients until just combined.
  7. Scoop tablespoons of batter onto the prepared baking tray, leaving space between each.
  8. Bake for about 12-14 minutes or until set with crackly tops.
