  • 1/2 cup olive oil
  • 1/4 cup water
  • 3 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1 teaspoon dried mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Cook pasta in salted boiling water per package instructions until al dente. Drain and rinse with cold water.
  2. Chop tomatoes, cucumber, bell pepper, and onion; add to a large bowl with olives.
  3. In a jar with a lid, combine dressing ingredients and shake well.
  4. Add cooled pasta to the vegetable mixture; stir in feta and parsley gently.
