  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • ⅓ cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 ½ tsp EACH onion powder, garlic powder, salt
  • 1 tsp EACH dried basil, dried oregano, dried thyme, paprika
  • ½ tsp EACH pepper, red pepper flakes

Instructions

  1. In a glass bowl or freezer bag, whisk together olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, and spices until well combined.
  2. Add the chicken to the marinade and coat thoroughly. Marinate for at least 30 minutes at room temperature or up to 12 hours in the refrigerator.
  3. Preheat grill to 400°F (204°C). Remove chicken from marinade and grill for about 5-7 minutes on each side until fully cooked (internal temperature reaches 165°F).
  4. Let the chicken rest for 5 minutes before slicing.
