  • 1 pound carrots (halved or quartered)
  • 1 pound asparagus (trimmed)
  • 2 zucchini (cut into sixths)
  • 2 yellow squash (cut into sixths)
  • 1 large red bell pepper (cut into ½ inch strips)

Instructions

  1. Prepare the Marinade: In a measuring pitcher, combine olive oil, balsamic vinegar, dijon mustard, honey, dried thyme, garlic powder, salt, and black pepper. Whisk until smooth.
  2. Prepare Your Vegetables: Trim and slice vegetables into long strips. Place them on a large rimmed baking sheet and pour the marinade over them. Toss gently to coat evenly.
  3. Marinate and Grill: Allow vegetables to marinate for at least 30 minutes. Preheat your grill to medium heat (about 350°F). Grill carrots first for 3-4 minutes before adding remaining vegetables. Grill for another 8-10 minutes until tender yet crisp.
