  • 1 pound lean ground beef
  • 3 tablespoons flour
  • 1 (6 ounce) can tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 2 Russet potatoes (peeled & diced)
  • 4 medium carrots (peeled & sliced)
  • 1 cup frozen peas (optional)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add chopped onion and celery; sauté for 5-7 minutes until softened.
  2. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add ground beef; cook while breaking apart until browned, about 8 minutes.
  4. Sprinkle flour over the mixture, stirring frequently for 1-2 minutes.
  5. Mix in tomato paste thoroughly to combine with the beef.
  6. Pour in beef broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots. Bring to a boil then reduce to a simmer for at least 30 minutes or until veggies are tender.
  7. Stir in frozen peas if desired; season with salt and pepper before serving hot.
