  • 1 pound boneless skinless chicken breasts
  • Salt and fresh ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • 1 small yellow onion
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • ¼ cup low sodium chicken broth

Instructions

  1. Cut chicken into 1-inch pieces; season with salt and pepper.
  2. Mix garlic powder, onion powder, thyme, rosemary, paprika, and chili powder in a bowl; sprinkle half over chicken.
  3. Drizzle half tablespoon of olive oil on chicken and coat evenly.
  4. Heat 1 tablespoon of olive oil in a skillet; cook chicken for 6-8 minutes until browned.
  5. Set cooked chicken aside; sauté onions for 2 minutes in the same skillet.
  6. Add broccoli, zucchini, and bell peppers; season with remaining spices; cook for another 4-6 minutes.
  7. Pour in chicken broth; return chicken to skillet; stir and heat through for an additional minute.
