Ingredients

  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz (220g) pasta (fusilli recommended)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 cup vegetable stock
  • Optional: 1/2 teaspoon cayenne pepper, 1/2 teaspoon chili flakes
  • 1 cup grated parmesan
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the pasta in boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced zucchini until golden on the edges; remove from skillet.
  3. In the same skillet, combine cherry tomatoes, black pepper, fennel seeds, garlic powder, optional cayenne pepper, and vegetable stock. Cover and cook until tomatoes blister.
  4. Add cooked zucchini and pasta to the skillet; mix well with parmesan cheese. Heat through and adjust seasoning as needed.
  5. Serve immediately with an extra drizzle of olive oil and additional parmesan if desired.
