Ingredients

  • 4 medium beets
  • 4 large carrots
  • 1 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1 Tbsp butter
  • 2 Tbsp honey
  • 1 Tbsp fresh herbs (thyme, rosemary, dill, etc.)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Wash and peel the beets and carrots, then chop them into even 1/2 inch pieces.
  3. Place the chopped vegetables on a sheet pan, drizzle with olive oil, sprinkle with sea salt, and toss to coat evenly.
  4. Roast in the preheated oven for 20-25 minutes until tender.
  5. While roasting, melt the butter in a microwave-safe bowl and whisk in the honey until well combined.
  6. Remove the vegetables from the oven, pour the honey butter mixture over them, and toss to coat.
  7. Return to the oven for an additional 5 minutes before serving hot, garnished with fresh herbs.
