  • 1 tablespoon olive oil
  • 1 pound kielbasa (cut into ½ inch pieces)
  • 2 garlic cloves (minced)
  • ½ cup yellow onion (finely diced)
  • ½ cup carrots (peeled and finely diced)
  • ½ cup celery (finely sliced)
  • 4 cups chicken stock
  • 1 ½ pounds potatoes (cut into cubes)
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • Kosher salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a Dutch oven, heat olive oil over medium-high heat. Cook kielbasa pieces until browned, then set aside.
  2. In the same pot, sauté garlic, onions, carrots, and celery for about 2 minutes until softened.
  3. Add chicken stock and cubed potatoes. Bring to a boil, then reduce heat and cook covered for about 15 minutes or until potatoes are tender.
  4. Stir in the cooked kielbasa, heavy cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low until cheeses melt completely.
  5. Garnish with chopped parsley before serving.
