  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 6 cups chicken broth
  • ½ cup uncooked rice (or orzo pasta)
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • Juice of 2 lemons
  • Fresh dill (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion for about 5 minutes until softened, then add minced garlic and sauté for another 1-2 minutes until fragrant.
  2. Pour in chicken broth, bring to a boil, and add rice (or orzo). Reduce heat to simmer and cook for 10-12 minutes until tender.
  3. While cooking, whisk eggs in a bowl until frothy; gradually add lemon juice while whisking.
  4. Temper the egg mixture by slowly adding hot broth while whisking continuously. Pour back into the pot gently.
  5. Stir in shredded chicken and heat through for about 5 minutes without boiling. Season with salt and pepper.
  6. Serve warm, garnished with fresh dill and lemon wedges.
