Ingredients

  • Fresh okra
  • 1 quart white vinegar
  • 1 quart water
  • 1/2 cup pickling salt
  • 1 tsp dill seed
  • 1 pod red pepper or 1/8 tsp cayenne pepper
  • 3 garlic cloves

Instructions

  1. Prepare the brine by mixing vinegar, water, and pickling salt in a pot; bring to a boil.
  2. Wash the okra thoroughly and set aside.
  3. Sterilize jars in a canner filled with simmering water.
  4. Clean jar lids and bands in warm soapy water.
  5. Add seasoning (dill seed, red pepper, garlic) to each jar.
  6. Pack okra tightly in jars and cover with hot brine.
  7. Leave 1/2 inch headspace; remove air bubbles gently.
  8. Seal jars with lids and bands securely.
  9. Process jars in boiling water for about 15 minutes to seal.
  10. Allow jars to cool completely before checking seals.
