Ingredients

Scale
  • 6 boneless pork loin chops (about 1-inch thick)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 cup pineapple tidbits

Instructions

  1. Season pork chops with salt and pepper on both sides.
  2. In a mixing bowl, whisk together pineapple juice, barbecue sauce, brown sugar, sea salt, ground ginger, garlic powder, and dried minced onions.
  3. Heat olive oil in a cast iron skillet over medium-high heat; sear the pork chops for about 2 minutes per side until golden brown.
  4. Remove chops from skillet; cover with foil to keep warm.
  5. Pour the sauce mixture into the same skillet, scraping up browned bits; bring to a boil then reduce heat to medium.
  6. Return pork chops to the skillet; simmer in the sauce for about 8–10 minutes until they reach an internal temperature of at least 145 degrees Fahrenheit.
  7. Stir in pineapple tidbits just before serving.
