  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour (or regular AP flour)
  • 1 cup blanched almond flour
  • 1/2 cup vanilla protein powder
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×5 loaf pan with cooking spray and parchment paper.
  2. Puree bananas until smooth; add to a mixing bowl.
  3. Whisk in melted butter or coconut oil, eggs, Greek yogurt, and vanilla until blended.
  4. Gradually incorporate gluten-free flour, almond flour, protein powder, baking powder, cinnamon, and salt.
  5. Mix until just combined; gently fold in optional chocolate chips.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes or until a toothpick inserted comes out clean. Cool for at least an hour before slicing.
