Ingredients
- 1/2 cup butter (softened)
- 3/4 cup granulated sugar

- 1 tbsp lemon juice
- 1/4 tsp salt
- Zest from 1/2 lemon
- 3/4 cup all-purpose flour
- 3/4 – 1 cup fresh raspberries
- 1 cup powdered sugar
- 1 tbsp seedless raspberry jam
- 1 tbsp lemon juice
- Zest from 1/2 lemon
Instructions
- Preheat your oven to 350°F and prepare an 8×8 square pan.
- In a mixing bowl, combine softened butter and sugar until creamy. Add eggs, lemon juice, salt, and zest; mix well.
- Gently fold in flour and fresh raspberries until just combined. Pour into the prepared pan.
- Bake for about 25 minutes until edges are lightly browned and center is set. Cool completely in the pan.
- For the glaze, whisk together powdered sugar, raspberry jam, lemon juice, and zest until smooth. Spread over cooled bars and let set for at least 20 minutes before slicing.
