Ingredients
- 6–8 large ripe peaches (about 3 pounds)
- 1/2 cup granulated sugar (for peach puree)
- 1 tablespoon fresh lemon juice (for peach puree)
- 1 1/2 cups freshly squeezed lemon juice (from 8–10 medium lemons)
- 1 cup granulated sugar (for simple syrup)
- 4–6 cups cold water (for dilution)
- Fresh peach slices, lemon wheels, and mint sprigs for garnish
- Ice cubes
Instructions
- Wash and dice the peaches. In a medium saucepan, combine diced peaches, sugar, water, and lemon juice. Simmer for 10-15 minutes until soft.
- Mash peaches and strain through a fine-mesh sieve into a large bowl to create peach puree. Allow cooling.
- In a small saucepan, dissolve sugar in water over medium heat to make simple syrup; cool completely.
- Juice the lemons to yield about 1 1/2 cups of juice; strain out seeds and pulp.
- Combine cooled simple syrup and strained lemon juice in a large pitcher. Stir well.
- Mix in the cooled peach puree and add cold water gradually until desired sweetness is achieved.
- Chill for at least 30 minutes before serving over ice with garnishes.
