  • 1/4 cup sugar
  • 1 cup cold butter
  • 2 cups sugar (for filling)
  • 7 tablespoons all-purpose flour (for filling)
  • 1 cup heavy whipping cream (for filling)
  • 3 large eggs, beaten
  • 5 cups finely chopped rhubarb
  • 6 ounces cream cheese, softened (for topping)
  • 1/2 cup sugar (for topping)
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy whipping cream, whipped (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 13×9-inch baking pan.
  2. Prepare the crust by combining flour and sugar; cut in cold butter until crumbly. Press into the bottom of the pan and bake for 10 minutes.
  3. In another bowl, whisk together sugar, flour, heavy cream, and beaten eggs; stir in rhubarb.
  4. Pour filling over the crust and bake for 40-45 minutes until set. Cool on a wire rack.
  5. For the topping, beat cream cheese with sugar and vanilla until smooth. Fold in whipped cream.
  6. Spread topping over cooled bars and refrigerate until firm. Cut into squares and serve chilled.
