  • 2 cups corn kernels (3 ears cooked)
  • 1 tablespoon olive oil
  • 12 oz cooked sausage (cajun, andouille, or smoked)
  • 1 large red bell pepper (diced)
  • 1 large zucchini (sliced)
  • 1/2 teaspoon chili powder
  • Fresh cilantro (chopped)

Instructions

  1. Heat olive oil in a cast-iron skillet over medium heat.
  2. Slice the cooked sausage into coins and cook for about 5 minutes on one side, then flip to cook for another 3 minutes. Remove the sausage from the skillet.
  3. In the same skillet, add diced bell peppers and sauté for approximately 4 minutes. Remove from the skillet.
  4. Add sliced zucchini and cook for 3 minutes. Off the cob, slice corn kernels.
  5. Combine sausage, bell peppers, zucchini, and corn in the skillet. Add chili powder and mix well until heated through.
  6. Garnish with freshly chopped cilantro before serving.
