  • 12 ounces dried spaghetti or linguine
  • 5 cloves fresh garlic (minced)
  • 1 cup low-moisture mozzarella (shredded)
  • 1/2 cup dry white wine or low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • 3 tablespoons extra virgin olive oil
  • Juice from 1 lemon
  • Zest from 1 lemon
  • 1 pound large shrimp (deveined)
  • Kosher salt and black pepper (to taste)
  • Fresh parsley (for garnish)
  • Crushed red chili flakes (optional)
  • 1/2 cup finely grated Parmesan cheese

Instructions

  1. Cook pasta in salted water until al dente; drain and set aside.
  2. In a skillet, heat olive oil and half the butter over medium heat. Sear shrimp seasoned with salt and pepper until opaque; transfer to a plate.
  3. In the same skillet, melt remaining butter, add garlic and red pepper flakes; sauté briefly. Pour in wine or broth, lemon juice, and zest, simmering until slightly reduced.
  4. Toss cooked pasta with the sauce, stir in half of the cheeses and parsley; fold in shrimp.
  5. Transfer to a greased baking dish, top with remaining cheeses, bake at 375°F for about 15 minutes until golden.
  6. Garnish with parsley before serving.
