  • 2 pounds yellow squash (sliced)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)
  • 3 tablespoons butter (melted)

Instructions

  1. In a large pan over medium heat, melt 1 tablespoon of butter and sauté diced onion until soft.
  2. Add sliced yellow squash and cook for about 10-12 minutes until tender. Drain excess moisture using a colander lined with a towel.
  3. In a mixing bowl, combine drained squash mixture with garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and half of the Parmesan cheese.
  4. Prepare the topping by mixing crushed butter crackers with melted butter and remaining Parmesan.
  5. Spread the squash mixture in a greased baking dish and top with the cracker mixture.
  6. Bake at 350°F for about 25 minutes or until golden brown on top.
