Ingredients
- 2 pounds yellow squash (sliced)
- 1/4 cup butter
- 1/2 cup diced onion
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 large egg (beaten)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup butter crackers (finely crushed)
- 3 tablespoons butter (melted)
Instructions
- In a large pan over medium heat, melt 1 tablespoon of butter and sauté diced onion until soft.
- Add sliced yellow squash and cook for about 10-12 minutes until tender. Drain excess moisture using a colander lined with a towel.
- In a mixing bowl, combine drained squash mixture with garlic powder, salt, black pepper, sour cream, beaten egg, cheddar cheese, and half of the Parmesan cheese.
- Prepare the topping by mixing crushed butter crackers with melted butter and remaining Parmesan.
- Spread the squash mixture in a greased baking dish and top with the cracker mixture.
