  • 1 cup dark brown sugar
  • 1 cup unsalted butter (room temperature)
  • 3 large eggs (room temperature)
  • 1 3/4 cups cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg (freshly grated)
  • 1/4 tsp ground cloves
  • 1/2 cup cultured buttermilk
  • 2 cups diced peaches (skin on)
  • 1 tsp coarse sparkling sugar

Instructions

  1. Preheat the oven to 350°F. Lightly butter a 9×5 loaf pan and line with parchment paper.
  2. In a stand mixer, cream together dark brown sugar and butter until light and fluffy (about 5 minutes).
  3. Beat in eggs one at a time until fully incorporated; mix for another 2-3 minutes.
  4. In a separate bowl, whisk together flour, baking powder, salt, and spices. Gradually add this to the mixer alternately with buttermilk.
  5. Gently fold in diced peaches until just combined.
  6. Pour batter into prepared loaf pan and sprinkle with sparkling sugar.
  7. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
  8. Allow cooling in the pan for about 10 minutes before removing.
