Instructions

  1. In a medium saucepan over medium heat, combine rhubarb, strawberries, sugar, and lemon juice.
  2. Stir until well mixed; let bubble then reduce heat to medium-low.
  3. Cook while stirring occasionally for about an hour until thickened (above 220°F).
  4. Prepare jars by sterilizing them in boiling water.
  5. Fill hot jars with jam leaving 1/4" headspace; seal with lids.
  6. Process jars in boiling water for 10 minutes; cool undisturbed for 24 hours.
