Ingredients
- 2 bunches kale
- 3–4 fresh peaches
- 1 cup blueberries
- ¼ cup pepitas
- 4 lemons (for vinaigrette)
- 2 Tbsp + 2 tsp honey
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Spread pepitas on the baking sheet and toast for 5–6 minutes until golden. Set aside.
- Whisk together lemon juice, honey, olive oil, and cracked black pepper in a jar; refrigerate.
- Remove kale stems; chop leaves into bite-sized pieces. Massage with olive oil and lemon juice for about 5 minutes.
- Dice peaches and rinse blueberries; add to the bowl with kale.
- Drizzle vinaigrette over the salad mix and toss gently until coated.
- Serve topped with toasted pepitas.
