Ingredients

  • 2 bunches kale
  • 34 fresh peaches
  • 1 cup blueberries
  • ¼ cup pepitas
  • 4 lemons (for vinaigrette)
  • 2 Tbsp + 2 tsp honey
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Spread pepitas on the baking sheet and toast for 5–6 minutes until golden. Set aside.
  3. Whisk together lemon juice, honey, olive oil, and cracked black pepper in a jar; refrigerate.
  4. Remove kale stems; chop leaves into bite-sized pieces. Massage with olive oil and lemon juice for about 5 minutes.
  5. Dice peaches and rinse blueberries; add to the bowl with kale.
  6. Drizzle vinaigrette over the salad mix and toss gently until coated.
  7. Serve topped with toasted pepitas.
