  • 1 pound rotini pasta
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 16 ounces Catalina dressing
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce
  • ¼ cup chopped cilantro

Instructions

  1. Cook rotini in a large pot of boiling water according to package instructions. Drain and rinse with cold water.
  2. In a skillet over medium heat, cook ground beef until browned. Drain grease and mix in taco seasoning with ¼ cup water. Simmer for about 5 minutes.
  3. In a mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and shredded cheese.
  4. In a separate bowl, whisk together Catalina dressing and sour cream until smooth.
  5. Pour the dressing over the pasta mixture and stir until evenly coated.
  6. If serving immediately, fold in crushed Doritos and shredded lettuce just before serving.
