Ingredients
- 2 lbs chicken thighs (or breasts), cut into 1" cubes
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup low sodium soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger, minced
- 1 tbsp honey
- 1/2 tsp sesame oil
- Sesame seeds and chopped green onion for garnish
Instructions
- Prepare the teriyaki sauce by combining cornstarch with water in a bowl. In a saucepan, mix remaining ingredients with the cornstarch mixture. Simmer until thickened.
- Marinate the chicken by placing cubed pieces in a ziplock bag with half of the cooled teriyaki sauce. Refrigerate for at least 30 minutes.
- Preheat your grill to medium heat and thread marinated chicken onto skewers.
- Grill skewers for about 20-30 minutes, turning every few minutes, until the chicken reaches an internal temperature of 165°F. Baste with remaining sauce during the last few minutes.
- Serve garnished with green onions and sesame seeds.
