- 30ml maple syrup
- 2 salmon fillets
- 3 tbsp rice vinegar
- 0.5 tsp garlic granules
- 150g edamame beans
- Half ripe avocado
- 2 tbsp sesame seeds
Instructions
- Cook sushi rice according to package instructions. Prepare a dressing by mixing rice vinegar, sugar, and salt until dissolved; pour over hot rice and fluff gently.
- In a small frying pan, toast sesame seeds over medium heat until golden.
- Chop salmon into chunks and spring onions finely. Combine maple syrup, sesame oil, tamari soy sauce, garlic granules, and mirin to make the teriyaki marinade.
- Divide cooked rice between two bowls; add edamame beans and sliced avocado.
- Pour teriyaki marinade into the pan over high heat until bubbling; reduce heat and add salmon chunks to coat in glaze. Cook until desired doneness.
- Top each bowl with glazed salmon, toasted sesame seeds, and spring onions.
