  • 5 roma tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup green onion, chopped
  • 1 pre-baked 9-inch pie crust
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise (or half mayo, half Greek yogurt)
  • 2 tablespoons freshly grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Drain tomato slices in a colander with salt for 10 minutes; pat dry.
  3. Layer tomatoes in the pre-baked pie crust; add basil and green onions; season with salt and pepper.
  4. In a mixing bowl, combine mozzarella, cheddar, mayonnaise, and mix well.
  5. Spread the cheese mixture over the layered vegetables.
  6. Top with grated parmesan cheese.
