  • 1 pound ground spicy Italian sausage
  • 3 garlic cloves, minced
  • 1 medium white onion, diced
  • 1.5 pounds Yukon Gold potatoes, diced

  • 2 to 3 cups chopped kale
  • 1 cup heavy whipping cream
  • fine sea salt and freshly-ground black pepper
  • 6 pieces bacon, cooked and crumbled

Instructions

  1. In a large stockpot over medium-high heat, brown the ground sausage until fully cooked. Use a slotted spoon to remove the sausage from the pot while reserving some grease.
  2. Sauté diced onions in the reserved grease for about 5 minutes before adding minced garlic for an additional minute.
  3. Introduce diced potatoes and chicken stock back into the pot along with the cooked sausage. Bring to a simmer and cook until potatoes are tender (about 10 minutes).
  4. Stir in chopped kale and heavy cream; let simmer for another 5 minutes while seasoning with salt and pepper.
